1.5 lbs of potatoes(your choice)
1/2 cup lightly toasted pumpkin seeds
2 or 3 scallions, chopped

Vinaigretteย 

3tbsp extra virgin olive oil
4 tsp ๐Œ๐จ๐ซ๐ง๐ข๐งโ€™ ๐๐ฎ๐ณ๐ณ ๐‚๐จ๐Ÿ๐Ÿ๐ž๐ž, brewed to taste(we used ๐‹๐ข๐ ๐ก๐ญ๐ก๐ž๐š๐๐ž๐)
2 tsp balsamic vinegar(apple cider makes a less sweet dressing that is just as good)
Salt and pepper

Combine vinaigrette ingredients in bowl and whisk together.

Cook potatoes until tender.ย ย 

Combine potatoes, pumpkin seeds and scallions in a bowl.ย 
Stir in vinaigrette until combined!

Season with fresh cracked pepper and sea salt, to taste.

Serve warm!
