𝐁𝐮𝐳𝐳𝐞𝐝 𝐏𝐨𝐭𝐚𝐭𝐨 𝐒𝐚𝐥𝐚𝐝
1.5 lbs of potatoes(your choice)
1/2 cup lightly toasted pumpkin seeds
2 or 3 scallions, chopped
3tbsp extra virgin olive oil
4 tsp 𝐌𝐨𝐫𝐧𝐢𝐧’ 𝐁𝐮𝐳𝐳 𝐂𝐨𝐟𝐟𝐞𝐞, brewed to taste(we used 𝐋𝐢𝐠𝐡𝐭𝐡𝐞𝐚𝐝𝐞𝐝)
2 tsp balsamic vinegar(apple cider makes a less sweet dressing that is just as good)
Salt and pepper
Combine vinaigrette ingredients in bowl and whisk together.
Cook potatoes until tender.
Combine potatoes, pumpkin seeds and scallions in a bowl.
Stir in vinaigrette until combined!
Season with fresh cracked pepper and sea salt, to taste.
